Shopping & Ingredients List:

400g Courgettes, sliced

Red Peppers, chopped

Red Onions, in wedges

Aubergine, chopped

Garlic Cloves, chopped

2 tbsp Olive Oil

300g Cherry Tomatoes, halved

small handful of Basil Leaves, torn

4 x 150g Cod Loins

Salt & Pepper to season

Method

1. Preheat oven to 220c (220 fan), 425f, gas mark 7.

2. Place all the vegetables except the tomatoes & basil, into an ovenproof dish & toss together with the oil & season with salt & pepper. Bake for 16 minutes.

3. Toss through the tomatoes & basil. Nestle the cod loins between the vegetables. Roast for a further 10-12 minutes. Serve immediately.
